Once prince Lucerys velaryon was killed by Aemond Targaeyen, princes rhaenyra targaryen gone mad. The history says that the real reason for start the Dance of the dragon is killing the innocent prince Lucerys velaryon. The book says that this was a purposely arranged murder while the series telecasting it as a mistake by Aemond Targaryen. 

Rhaenyra targaryen was not in the mood of war even the Greens have stolen her crown after the dead of her father. She value her relationship between queen Alicent Hightower thus she somehow keep her banner-men and mainly Daemon in her control instead of getting to the war.

Lucerys dead was a key point to get rhaenyraback to the track and daemon was used it well. He was a rude and rogue person at all the time, he wanted to finish the Otto Hightower and queen Alicent since he was hated by them while he was in the kings landing. Daemon take this opportunity to make rhaenyra against Greens.

Daemon Targaryen is a character in the book that he was very loyal to his family and hated who tried to stand against house targaryen. If you read the Post about Daemon Targaryen you are known that the he was known as "Prince of the city", in simple terms daemon associate with not only the royalists, he had many connections in kings landing and they were loyal to him.

In the red keep there were many kind of people and daemon choose two from it. Blood was a murderer. He was a serjeant in King's Landing's City Watch who lost his gold cloak for thrashing a whore to death in a drunken chaos. Cheese was a ratcatcher who had extensive knowledge in the Red Keep's underground passageways.

Cheese led Blood into the heart of the castle, undiscovered by any guards, via a forgotten path. Some say their quarry was the king himself, but Aegon was always escorted by the Kingsguard, and even Cheese knew of no way in or out of Maegor's Holdfast except through the drawbridge that spanned the dry moat and its terrible iron spikes.

 

Daemon didn't want to kill Aegon here because then Prince Aemond would become king, or Alicent would be Regent until Jaehaerys came of age, and the Blacks would continue to rage.


Killing a child conveys a message of surrender - it's better to finish everything quickly than to drag it out.

In this instance queen pleaded to kill her instead of the children, however the assassins was not commanded by daemon to kill the queen, they didn't agreed for that.

Heleana has no choice, how come a mother can pick one child to get him murdered...?  At the end she choose her youngest Maelor. In this scenario she wanted to give his younger child because of that the child is not grown enough to understand what is happening, in the other side the oldest Jaehaerys is king's first born son and who is in next in line to iron throne.

        “You hear that, little boy?” Cheese whispered to Maelor. “Your momma wants you dead.” Then             he gave Blood a grin, and the hulking swordsman slew Prince Jaehaerys, striking off the boy’s             head with a single blow."

That is how the assassins did what his master asked to do.
